Ingredients:
- 5 cups of cooked chickpeas
- 1 cup of grated carrot
- 1 large brown onion, diced
- 2 cloves of minced garlic
- ¼ cup of flaxseeds, ground
- Quality salt and black pepper to taste
- 1 tsp of cumin, ground
- 1 tsp of coriander, ground
- ¾ cup of flat-leaf parsley
- 1 TBSP of lemon juice, freshly squeezed
- 2 -3 TBSP of tahini paste
- 2 – 3 TBSP of chickpea flour
- Optional: sesame seeds or hemp seeds for the crust
Method:
- Preheat the oven to 180 degrees and grease your dish with good quality oil.
- Process your chickpeas, carrot, onion, garlic, spices, herbs salt and pepper.
- Add lemon juice and ground flax seeds, and combine well.
- Add Tahini paste and chickpea flower and combine.
- Make little, firm patties and cover with sesame or hemps seeds if using.
- Bake for 20 minutes or until golden brown. Turn the patties and bake for another 10 minutes or until golden on both sides and smelling irresistible.
