Sugar-Free Muesli Bars 2 Ways

Chewy Raw Muesli Bars

Ingredients:

  • 1 cup of rolled oats (raw or lightly toasted)
  • 3/4 cup of different seeds (sunflower, pumpkin, hemp…)
  • 2 TBSP of sesame seeds
  • 2 TBSP of chia seeds
  • ½ cup of mixed nuts (almonds, walnuts, pecans, hazelnuts…)
  • ¼ cup of shredded coconut, unsweetened
  • ½ tsp of cinnamon, unsweetened and ground
  • 1 tsp of pure vanilla bean, unsweetened and ground
  • Pinch of good quality salt
  • 1/3 cup of date sugar or dried fruit or 1 large ripe banana
  • ½ cup of almond butter (or any other nut butter, unsalted)
  • ½ cup of virgin coconut oil
  • ½ cup of date or rice malt syrup
  • Optional: Add 1-2 TBSP of freshly squeezed orange juice

 

Method:

  1. Line a baking tray with baking paper and set aside.
  2. In a large bowl mix all your dry ingredients.
  3. In a smaller saucepan heat all your wet ingredients except your organge juice if using and stir until liquid and well combined.
  4. Take your wet ingredients from the heat and add your orange juice if using. Pour your wet ingredients into your bowl of dry ingredients and mix well.
  5. Quickly transfer your muesli bar mixture into your prepared baking dish and press down firmly.
  6. Place your dish into the fridge and refrigerate for at least 3 hours. Cut into bars and enjoy.
  7. Keeps in the fridge for up to an hour if stored in an airtight container.
  8. Tip: Place baking paper between the bars to avoid sticking together.

 

Crunchy-Licious Baked Muesli Bars

Ingredients:

  • 1 cup of almond meal or 1¼ cups of raw almonds, processed to fine meal
  • ¼ cup of cashew nuts, roughly chopped
  • ¼ cup of other nuts or dried fruits roughly chopped
  • ¾ cup of different seeds (sunflower, pumpkin…)
  • 2 TBSP of chia seeds
  • 2 TBSP of sesame seeds
  • ½ tsp of cinnamon, unsweetened and ground
  • 1 tsp of pure vanilla bean, ground
  • ¼ tsp of bicarbonate of soda or gluten-free baking powder
  • Pinch of good quality salt
  • ½ cup of virgin coconut oil
  • ½ cup of date or rice malt syrup
  • ¼ cup of almond milk or any other plant milk or alternatively for a non- plant-based diet use 1 egg
  • 2 TBSP of freshly squeezed orange juice

Method:

  1. Line your baking dish with baking paper and preheat the oven to 160 degrees.
  2. In a large bowl combine your dry ingredients.
  3. In a smaller saucepan, add all your wet ingredients except for the orange juice and stir until liquid and well combined.
  4. Add your orange juice to the wet ingredients and then stir wet ingredients into dry ingredients. Mix until well combined.
  5. Pour your muesli bar batter into your prepared baking dish and bake at low heat for 45 – 60 minutes or until batter is golden brown and smells irresistible. Cut into bars or squares once cooled and enjoy.
  6. Keeps for one week in an airtight container.
