Reset Your Cravings Muesli Bars

Ingredients

  • 1 heaped cup of Medjool dates, pitted, cut into small pieces and soaked with filtered water for at least 10 minutes
  • 1 cup of rolled oats
  • 1 cup of mixed nuts, chopped (I used walnuts, almonds and 3 Brazil nuts)
  • 1 cup of mixed seeds (I used sunflower and pepita seeds)
  • ½ cup of desiccated coconut
  • ½ tsp of Ceylon cinnamon ground, no sugar added
  • 1 tsp of pure ground vanilla, no sugar added
  • 1 pinch of sea or Himalayan rock salt
  • 3 TBSP of psyllium husk
  • ½ cup of coconut oil or ghee (ghee is clarified butter and lower in calories than coconut oil and rich in essential omega-3 fatty acids)
  • About ½ cup of warm filtered water
  • 2 pieces of ripe bananas, mashed

Method:

  1. Preheat the oven to 180 degrees and line a baking tray with baking paper.
  2. Soak your dates.
  3. Mix your psyllium husk with water into gel.
  4. In a large pot, mix the oats, seeds, spices, and salt, dried fruits and cacao nibs in a large bowl and combine well.
  5. Add the rest of your ingredients and warm on low heat, stirring and combining all of your ingredients into a sticky mixture.
  6. Spread your muesli bar mixture into your prepared baking dish, pressing down as firmly as possibly.
  7. With a cookie or pizza cutter, indent your dough where you would like it to be cut into bars (this will make the cutting after the baking easier) and bake for about 15 minutes or until golden and smelling irresistible.
  8. Let your muesli bars cool fully before cutting into bite-sized bars or squares.
