Rejuvenating Superfood Salad

Salad:

  • 2 cups of kale, de-stemmed and thinly sliced
  • 1 cup of spinach leaves
  • 1 cup of rocket leaves
  • 1 tin of organic black beans, thoroughly rinsed and drained
  • ¼ head of red cabbage, thinly sliced
  • ¼ head of green cabbage, thinly sliced
  • 1 avocado,diced
  • 2 oranges,peeled and diced
  • 3-4 springonions, thinly sliced
  • 1 cup of parsley
  • ½ cup of almonds, raw or slightly roasted
  • ½ cup of pepita seeds
  • 1 cup of herbs (I love adding mint, parsley or coriander)

Dressing:

  • 3 TBSP of freshly squeezed orange juice
  • 2 TBSP of freshly squeezed lemon juice
  • 1/2 TBSP of cold-pressed flax seed or linseed oil (alternatively use cold-pressed olive oil)
  • 2 TBSP of apple cider vinegar
  • 1 TBSP of Dijon mustard
  • 1 garlic, crushed
  • 1 TBSP of grated ginger
  • Good quality salt and black pepper to taste

Method:

  1. Wash, de-stem and slice your kale and put in a large bowl.
  2. In a small bowl, mix 1 TBSP of your choice of oil with 1 TBSP of freshly squeezed orange and 1 TBSP of freshly squeezed lemon juice and 1 TBSP of apple cider vinegar and sprinkle over your kale. Then massage into your kale until soft.
  3. Add the rest of the ingredients for your dressing in the same small bowl and prepare your dressing. Set aside.
  4. Prepare and add the rest of your greens to your big salad bowl.
  5. Thoroughly wash and dry your black beans, thinly slice your red and green cabbage, cube your avocado, peel and cut your oranges and thinly slice your spring onions. Add into your salad bowl.
  6. Prepare your herbs and if toasting,slightly roast your almonds on low heat. Top your salad with nuts, seeds and herbs.
  7. Pour your prepared dressing over your salad and enjoy!
