Quick Baked Beans

 

  • 1 TBSP coconut oil
  • 1 brown onion
  • 1 tsp turmeric
  • ¼ tsp red chilli powder
  • 2 large tomatoes, chopped into chunks
  • 1 cup of tomato passata
  • 400 g of favourite beans (rinsed and dried)
  • 1 tsp dried Oregano
  • 1 tsp dried Basil
  • Good quality salt and cracked black pepper to taste

Heat the oil in a pan over medium heat, add the onion, turmeric and chilli and cook until translucent.

Add chopped tomatoes, passata, beans and rest of spices.

Simmer until most of sauce is reduced and consistency is thick and rich.

Season with salt and pepper and enjoy.
