No-Fuss Rebalancing Bread


  • 3 cups of wholemeal spelt flour
  • 1 TBSP of psyllium husk
  • 1 TBSP of nutritional yeast
  • 2 tsp of aluminium-free baking powder
  • ½ tsp of good quality salt (I love to use herbal salt for this one, Herbamare is a good one)
  • 3 tsp of raw apple cider vinegar
  • 2 TBSP of avocado oil or grass-fed cultured ghee
  • 1 ¼ cups of lukewarm water
  • Optional: White and black sesame seeds to top


  1. Preheat your oven to 180 degrees and line your baking tray with baking paper.
  2. In a large bowl, combine all your dry ingredients, except for the sesame seeds if using.
  3. Make a well in the middle of your combined dry ingredients, and slowly add in oil and apple cider vinegar followed by water.
  4. Mix well by giving your dough a good knead.
  5. Shape into a ball, put into your prepped baking dish and flatten into your desired bread shape.
  6. Indent with a knife right in the middle, so you have a line going through the middle of your bread starting and finishing about 2 fingers off your bread edges.
  7. Sprinkle generously with sesame seeds if using and bake for about 45 minutes or until your bread is golden brown, baked through and smells irresistibly.
