Ingredients:
For the muffins:
- 5 cups of almond meal
- 3 TBSP of tapioca powder
- 1 tsp of gluten-free baking powder
- ½ tsp of sugar-free, powdered Ceylon cinnamon
- Optional: 1 tsp of pure ground vanilla bean
- Pinch of Himalayan salt
- ¼ cup of dark cacao nibs
- ¾ cups of pure organic apple sauce
- ½ cup of rice malt syrup
- ½ cup of liquid coconut oil
- 1 tsp of raw apple cider vinegar
- 1/3 – ½ cup of warm water
For the chocolate topping:
- 1 block of 90-95% dark chocolate, melted in a double boiler
Method:
- Prep your muffin forms.
- In a large bowl, mix all your dry ingredients.
- In a small pot, melt your coconut oil.
- Add your rice malt syrup to the coconut oil and combine.
- In a smaller bowl, combine all your wet ingredients.
- Add your wet ingredients slowly into your wet and combine until smooth batter forms.
- Pour your batter into your prepped forms and bake for 15-20 minutes or until golden brown and smelling irresistible.
- Let your muffins cool before topping with dark melted chocolate.
