Ingredients:
- ¾ cup of almond meal
- 1 TBSP of tapioca flour
- 1/3 cup + 3 TBSP of desiccated coconut
- Pinch of pink Himalayan salt
- ½ tsp of ground Ceylon cinnamon
- 1/3 cup + 1 TBSP of rice malt syrup
- 1 cup of unsalted almond butter
- 1 block of dark chocolate to coat (use at least 75% of cacao, I used 85% here but I sometimes even use 90%)
Method:
- In a bowl, mix all your dry ingredients.
- Add your wet ingredients and mix well until sticky batter forms.
- Roll into bite sized mouthfuls.
- In a double boiler, melt your chocolate and coat your bites with the melted chocolate.
- Place for 10-15 minutes into the fridge and enjoy how good your healthy life can taste and feel.
