Energising Vegetable Curry

1 brown onion

Small know of ginger

2 TBSP of turmeric

2 TBSP of yellow mustard seeds

2 TBSP of coriander

2 TBSP of cumin seeds

¼-1/2 tsp of ground chilli

1 cup of red lentils

2-3 cups of vegetable broth

3-4 TBSP of tomato paste

½ head of cauliflower

½ red capsicum

1 small courgette

2-3 stalks of kale

1 head of broccoli

Season with good quality salt and pepper (if stock is unsalted use about 1 heaped TBSP of good quality salt).

Brown onion in olive oil with spices, add lentils and water. Add vegetables, tomato paste and if needed additional seasoning. Simmer until most liquid is gone or vegetables are cooked.
