Vegan, gf, refined sugar-free
Ingredients:
Coconut Layer:
- ½ cup of unsweetened desiccated coconut
- ½ cup of oat bran
- 1 cup of full-fat coconut cream, chilled
- 3.5 TBSP – ¼ cup of rice malt syrup (the darker the chocolate you are using, the more sweetness you want to add in; however, I would not use more than ¼ of a cup unless you are used to eating very sweet foods, in which case start as sweet as you need it and slowly reduce the added syrup)
- Optional: Pinch of Himalayan rock salt
- Optional: ½ tsp of Ceylon cinnamon
Chocolate Layer:
- 1 bar of dark chocolate (at least 75% of cacao, I used 90%), melted
Method:
- In a small bowl, mix your shredded coconut, oat-bran, salt and spices if using.
- In a separate small bowl, mix your coconut cream and rice malt syrup.
- Add your wet ingredients to your dry ones and mix until well combined and you receive a sticky dough.
- Add your coconut dough to your heart-shaped forms.
- In the meantime, melt your chocolate in a double-boiler.
- Once melted, spoon over your coconut-cream mixture.
- Put into the freezer for 30 minutes to 1 hour.
