Coconut Blueberry Mousse


  • 1 tin full fat coconut milk, unsweetened and chilled for at least 24 hours, scoop out only the thick bits
  • 2 cups of frozen blue berries
  • 1 tsp of pure ground vanilla bean
  • 2 TBSP of rice malt syrup
  • Pinch of quality salt
  • Optional: 1 scoop of your favourite protein collagen (preferably unsweetened)


  1. Place all your ingredients into your high-speed blender and mix until well combined and texture creamy smooth.
  2. Top with more fresh or frozen berries and a small handful of pumpkin seeds!
