Berry-licious breakfast crumble

 

 

 

 

 

 

Ingredients:

  • 1 cup of frozen blueberries
  • 1 cup of frozen raspberries
  • 1 cup of frozen strawberries or 3 cups of mixed berries
  • 1 tsp of ground cinnamon, unsweetened
  • 1 tsp of pure, ground vanilla bean
  • 1 TBSP of rice malt syrup
  • 1 cup of rolled oats
  • ¼ cup of sunflower seeds
  • ¼ cup of desiccated coconut, unsweetened
  • 2 TBSP of walnuts, roughly chopped
  • 2 TBSP of almond, roughly chopped
  • 1 tsp of ground cinnamon, unsweetened
  • 1 tsp of pure vanilla bean, ground
  • Pinch of good quality salt
  • 1 TBSP of rice malt syrup
  • 2 TBSP of liquid coconut oil

 

Method:

  1. Line a square baking dish with baking paper and pre-heat the oven to 160 degrees or lightly grease different ramekins with oil.
  2. Place your oats, sunflower seeds, desiccated coconut, spices, salt and nuts in a large mixing bowl and combine well.
  3. Add your oil and rice malt syrup to the mixture until it is well coated.
  4. In a smaller bowl: combine your berries, spices and rice malt syrup.
  5. Transfer your berry mixture into your prepared baking dish or ramekins and top with your crumble mixture.
  6. Bake in the oven for 30-35 minutes or until your crumble is golden brown and smells irresistible.
