Ingredients:
- 1 cup of dried pitted, soaked organic dates, thinly sliced, grated or processed (I quite like the sliced version, which gives you little junks of dates which gives those muffins such a rich taste)
- 1 cup of almond meal
- ½ cup of buckwheat flour
- 1 TBSP of psyllium husk
- 3 TBSP of tapioca powder
- 1 tsp of gluten-free baking powder
- ½ tsp of sugar-free, powdered Ceylon cinnamon
- Optional: 1 tsp of pure ground vanilla bean
- Pinch of Himalayan salt
- ¼ cup of raw organic cacao powder
- ¼ cup of natural almond butter
- ¼ cup of rice malt syrup
- 1 tsp of raw apple cider vinegar
- About 2 TBSP of plant milk
Method:
- Prep your muffin forms.
- In a large bowl, mix all your dry ingredients.
- Add your prepared dates and combine.
- Add the rest of your wet ingredients, except for the plant milk, and combine until rich, sticky batter forms. If batter too dry add the plant milk accordingly.
- Pour your batter into your prepped forms and bake for about 15 minutes or until smelling irresistible.
